Baked Apple Millet
Serves 16
2 cups blanched almonds, slivered (pre-soaked overnight)
2 cups water
2 cups millet
4 cups raisins
16 apples, chopped
2 teaspoons salt
2 teaspoons cinnamon
16 cups boiling water
Optional additions: chopped dates, flaked coconut, sliced almonds, sunflower seeds
Pre-heat the oven to 350 degrees F. Blend the almonds into a paste, slowly adding the 2 cups of water. Mix all of the ingredients together in a casserole dish. Cover and bake for 1 hour, then uncover and bake for another 15-20 minutes.
Enjoy with soymilk and maple syrup.
