Baked Apple Millet
Serves 16
 2 cups blanched almonds, slivered (pre-soaked overnight)
2 cups water
2 cups millet
4 cups raisins
16 apples, chopped
2 teaspoons salt
2 teaspoons cinnamon
16 cups boiling water

Chickpea Curry (Channa Masala)
Serves 4
1 large onion, diced
2 tablespoons cooking oil
2 cloves of garlic, finely chopped or grated
1 inch piece of ginger, finely chopped or grated

Coconut Rice

2 cans coconut milk

Creamy Caesar Style Tofu Dip or Salad Dressing
1 package medium/firm tofu
Juice of 2-3 lemons (depending on size)
2 tablespoons capers
2 tablespoons Dijon or grainy mustard
1/3 cup olive oil
2 cloves of garlic, chopped

 2 packages of frozen spinach or 3 heads fresh spinach
2 tablespoons of cooking oil

Tea Flavored Oatmeal
Serves 4
2 cups oats
4 cups water
2 teabags
½ cup milk (regular, soy, or almond, can use more depending on taste)
Sweetener to taste (brown sugar, maple syrup, honey, sweet coconut and cashew cream)

Sweet Coconut and Cashew Cream
1 cup cashews, pre-soaked in water overnight
400ml can of coconut cream
2 tablespoons maple syrup or honey
1 teaspoon vanilla extractÂ
Combine the cashews and half the coconut cream in a blender and pulse until the mixture becomes smooth. Add the rest of the coconut cream and other ingredients and blend to combine.Â
